CARNIVAL PANCAKES

Carnival fritters ... the classic ones, the ones that you cannot fail to try at least once, the very easy, perfect and sweet ones that I prepare on Tuesday and Shrove Thursday in the square below the house.  It is a party for all the children, they have a lot of fun and go home full of sugar from head to toe.  I believe it is a tradition for all Italian cities, certainly yours too?  Everyone has his own recipe but they are all delicious.  As usual, I put raisins in mine (which I had left over from the Christmas pandolci) but if you don't like it, you can not put it.  Carnival is certainly one of the favorite parties for children and Bb obviously can't wait for it to arrive ... there are lots of desserts obviously prepared in this period and her favorites are the carnival pancakes, they are very easy to prepare and you have to try them at least once true?

Ingrediants

 -200 g Flour

 -125 ml Water

 -125 ml Milk

 -50 g Sugar

- 1 egg

 - Lemon peel

- 6 g Fresh brewer's yeast

 - 100 g Raisins

 - Peanut oil

 - Sugar

 - Preparation


 Heat the milk slightly and dissolve the crumbled yeast together with the sugar, mix and let it rise for a few minutes.

 Meanwhile, put the flour, lemon zest and whole egg in a very large bowl and mix well.

 At this point, add the water at room temperature and finally the milk mixed with the yeast and mix with a spoon.

 Always mix everything well with a spoon or a hand whisk so that no lumps form and then finally add the washed and dried raisins well.

 Let the dough rest at room temperature and covered with a cloth for about an hour and a half until it starts to have lots of bubbles on the surface.

 After this time, heat abundant peanut oil in a pot with high sides (as always, I remind you that the more oil you put in the pot, the less your food will absorb it) and when it is hot, spoon the dough and fry it by everyone. the sides turning well with a slotted spoon until your Carnival pancakes are golden.

 Drain the carnival pancakes and place them on absorbent paper.

 Sprinkle them with granulated sugar and always serve them hot.

 You can also use dry yeast by putting half the dosage indicated.

 Always fry in plenty of oil so your food will absorb less.

 This recipe cannot be baked in the oven.

 You can put icing sugar but it will melt with the heat of the pancakes.

 Eat them very hot otherwise when they cool they will never be the same.

 If you want, you can leave out the raisins and you can also sprinkle with the sugar as well as with ground cinnamon.
